How do you answer this question in an interview "what you have learnt over the last one year to upgrade your skillsets?"

While these are general examples, I hope you get the idea. You can talk about the books you read, groups you are active on etc and the learnings you get from your network.

Ideally, answer it honestly!

If you have upgraded your skills, you can easily talk about it.

But what if you haven’t really taken up formal courses to add to your skills?

You will need to scrape out something. You could say - I haven’t enrolled in formal courses. However, I regularly read newspapers adding to my knowledge about current affairs and industry news. I also keep up with news feeds on Linkedin.

OR

I am quite active on Instagram. And over the last year, I have learnt how to write better posts, hashtag them better and generate engagement.

While these are general examples, I hope you get the idea. You can talk about the books you read, groups you are active on etc and the learnings you get from your network. Plus, it should also be relevant to the job or profile you have applied for. IF you are going for a technical job and say you’ve aced Instagram, I don’t think that would make a great impact.
